Fig and Manchego Bread Salad: Recipe from Claudio Urciuoli of Noble Bread for the Arizona Republic August 15 2014

6 to 8 ounces Noble bread
2 figs, quartered
2 ounces Manchego cheese
2 ounces pecans, toasted
1 splash balsamic vinegar
1 splash extra-virgin olive oil
1 sprinkle flavored sugar (such as those offered by Terre Botanicals of Phoenix)

Tear bread into bite-size pieces and place in a large bowl. Add figs, cheese and pecans; toss gently. Add a splash of vinegar and olive oil and a sprinkle of flavored sugar. Serve immediately.

Makes 2 servings

Per serving: 583 calories, 29 g fat, 25 mg cholesterol, 15 g protein, 67 g carbohydrates, 7 g fiber, 921 mg sodium, 44 percent calories from fat.
